An empty space is found when the substrate raffinose is bound; this space is then occupied by the sucrose product after raffinose has been hydrolyzed. (b) A top view clearly shows that after raffinose has been hydrolyzed the sucrose product is flipped 180° and occupies the secondary product-binding site.
